The season of winter squashes is upon us and yes, you read the subtitle correct they are actually classified as fruit. Because they have seeds and grow from the flower of the plant they botanically, are fruit. However for all intensive purposes I call them vegetables and I think most would agree squashes are one tasty vegetable.
Did you know squashes are actually fruit?
Delicata squash is my favorite. It is smaller in size then most, oblong in shape, has a yellow skin with green stipes and the skin is soft enough to eat. Delicata squashes are around starting in the fall, late September, October and you will be able to get them for a few months. But unlike more popular varieties, such as butternut, delicata usually disappear from the stores half way through the winter months. My advise is to buy a bunch when you see them to make sure you have plenty to last all winter.

Oh, the sweet Variety of Winter Squashes
There are many different types of winter squashes. I will go over some of the most popular that many people use in their cooking.
Butternut: orange skin, oblong neck with a round bottom, orange inside, very sweet, soft skin that you can eat, great for baking, roasting, soups, casseroles and stews
Acorn: green skin with orange flesh, not as sweet, but still delicous, the skin is not as soft, but you can still eat it, great for baking, roasting, and stews
Buttercup or Kabocha: green skin with bright orange inside, one of the sweetest, you can eat the skin, the best squash for soups, baking, roasting, stews and casseroles
Spaghetti: yellow skin with yellow inside, skin is too hard to eat, best used baked and the flesh scooped out to use like spaghetti noodles
Sweet Dumpling: yellow to orange skin with green spots, orange inside, skin is too hard to eat, best used baked and stuffed because of the pretty presentation
Hubbard: can be green skin or orange, bright orange inside, wonderfully sweet, skin can be eaten but can be too rough, great for baking, soups, and stews
There are a few others that are less popular.

Squash is a great vegetable (fruit) to have as a side dish for your Thanksgiving or holiday dinner. The natural sweetness and color are a great complement to your plate. Remember we eat with our eyes first, so make sure your food is colorful and beautiful! When cooking for the holidays, it does not have to be complicated. Remember to make a few dishes be simple.
