One of my favorite sweeteners is Amazake. Made from fermented sweet brown rice, it will satisfy your sweet tooth and fulfill your search for a healthy sweetener. Far superior to intensely sweet alternative sweeteners that are not energetically compatible with our energy. The complex, slowly digested naturally sweet, fermented malted beverage, Amazake, has a peaceful energy that is more compatible with our energy.
What is Amazake?
Amazake is a natural sweetener made from brown rice. It is a slowly absorbed complex carbohydrate fermented food.
It usually takes one or two days to prepare. Sweet brown rice is mixed with water and koji. Koji is brown rice inoculated with Aspergillus oryzae. This mixture is allowed to ferment, then blended, filtered or diluted to make a naturally sweet, somewhat thick, pulpy liquid.
Amazake, like brown rice syrup, is predominantly maltose. Maltose is the type of sugar that is created from whole grains. I use the word ‘sugar’ to describe the sweet substance in amazake. It is not the same as white sugar. Some people get confused about that.
Maltose will never spike your blood sugar levels. Sweeteners made from whole grains, have a gentler, more balanced energy release as they are digested. This does not disrupt your metabolism. Unlike intense sweeteners that are not energetically compatible with our energy and will disrupt your metabolism.
Because amazake comes from brown rice, a complex carbohydrate, it digests slowly, usually one to two hours. This can give your body a prolonged energy source without the immediate blood sugar rush that will happen with other sweeteners.

Update on Save Our Ostriches:
The Canadian Food Inspection Agency (CFIA) has ordered the culling of 400 ostriches at Universal Ostrich Farm in British Columbia, citing concerns over H5N1 bird flu. However, this decision is not based on sound science and could have serious consequences for both food security and medical research.
