I'd like to opt out of your "our" ("intense sweeteners that are not energetically compatible with our energy") because amazaké is far too sweet for me. It does give me a "blood sugar rush", even more than white sugar does.

Thank you for your comment. In my 28 years of teaching cooking classes, you are the first one to report that Amazake effects you more then white sugar. I know everyone is different. I personally can not eat dates, they are too sweet for me and my teeth hurt when I eat anything with dates in them. However many can eat dates as their sweetener and dates are better energetically for us than white sugar.

Valerie if your teeth are hurting when you eat dates, you may have some tooth roots exposed by receding gum tissue near the tooth/teeth. I found this out the hard way... not with a date but with other sweet food.
