Is there a general rule for substituting brown rice syrup for granulated sugar in a baked goods recipe? So much good information. Thanks so much for this post and your time.
Hi Vicki, I get asked that question all the time also. There is not general rule for replacing granulated sugar for B.R.S. You have to take into consideration that B.R.S. is a liquid and granulated sugar is a dry ingredient. So you have to adjust for the wetness in your dough. I have converted some recipes and you really have to change the wet to dry ratio to get the correct consistency. I agree, Brown Rice syrup is the best sweetener to use. I use it. all the time. Maybe once in a blue moon barley malt or maple syrup. But why have they stopped carrying brown rice syrup at all the local stores including Whole Foods stores? I can only order it on line. Back in the good ole days I could find brown rice syrup on the shelves in many stores. Do they sell it at stores where you are? or do you have to order it on line too? Why if I can order it on line at Whole Foods , don't the local whole foods stores sell it??
I don't know for sure, but I would bet it has to do with the fact that Amazon bought Whole Foods several years ago. The store is changed. The bulk department is diminishing, and where I live, WF is the main customer for the natural food distributor (UNFI). So when WF drops bulk items, the distributor stops carrying it too. Because of this some items can't even be ordered by my local independent natural food stores.
I have not shopped at Whole Foods in over 15 years. It is probably the distributor does not carry it therefore the store does not carry it. See my reply to Jacob above. If more people knew about B.R.S. it would sell more and more stores would carry it. Thanks for your comment.
Thanks for your questions. I have always ordered Brown Rice Syrup directly from Suzanne's Specialties because I am a business. When I taught cooking classes at the local Better Health health food stores for over 15 years, I had to always aske the to stock B.R.S. because I was always teaching about it in my classes. I think health food stores stop carrying it because it is more expensive and people just do not know about it. Other sweeteners that are not healthy, that I mentioned in the blog, such as agave are less expensive and are more advertised so more people buy it, therefore the stores carry more of that instead of the healthy B.R.S. I have not shopped at Whole Foods in over 15 years. I shop at the local Better Health Store (in Michigan) but since I do not teach cooking classes there anymore, they stopped carrying it. I was able to get Lundberg B.R.S. at the local Fresh Thyme store with I ran out of Suzanne's however they stopped carrying that a couple years ago also. I think it does not sell because no one know about it. It is still the most asked question I get in my cooking classes, what is the healthiest sugar substitute, and when I answer many still have not heard about B.R.S.
